A Trondheim il concetto di “cibo locale” ha radici naturali profonde, ma trova sempre nuove forme. Questa destinazione culinaria è in posizione perfetta al centro di tutto ciò che proviene fresco dall’entroterra e dal mare.
Una meta imperdibile per gourmet
Al momento, parlando di cibo, Trondheim ha il gusto delle idee innovative. “Dato che non siamo una grande città, lavoriamo sodo per dare il meglio”, dice Renée Fagerhøi, chef del proprio ristorante Bula Neobistro.
Cresciuta nella periferia rurale della città, Renée ha imparato presto a fare di tutto, da panificare e raccogliere frutta e verdura, a macellare il pollame. Il nome del suo ristorante aperto di recente - “Bula” - in slang norvegese significa locale tranquillo dove mangiare, bere e stare insieme.
“Trondheim è il posto perfetto dove venire se cerchi tutto questo”, assicura Renée.
I vari profumi della terza città della Norvegia provengono da un numero crescente di differenti cucine. In tutta Trondheim c’è una forte tendenza a mischiare i cibi locali con idee innovative, specialmente in ristoranti come Fagn, Speilsalen, To Rom og Kjøkken, Astrum Skybar, 73 Bar og Restaurant e il ristorante di pesce Havfruen Sjømatrestaurant. La gente del posto si ritrova qui a tavola per festeggiare qualcosa, o anche solo per mangiare un boccone.
Sellanraa Bok & Bar è un tipico esempio della tendenza che c’è a Trondheim di esaltare i fornitori locali di materie prime freschissime. Selvaggina e cacciagione, agnello, pesce e frutti di mare, e bacche, sono tutte specialità della regione di Trøndelag.
Una nuova ondata di micro birrifici, oltre a tante nuove caffetterie, proseguono una lunga tradizione di produzione locale. Molte volte durante l’anno puoi lasciarti tentare al Mercato contadino a Torvet, mentre ogni anno a inizio agosto puoi farti un’abbuffata al festival gastronomico Trøndersk matfestival.
Renée del Bula Neobistro ritiene che la natura che circonda Trondheim offra tutti gli ingredienti freschi che desiderano i molti esigenti chef della città, e riassume così: “Trondheim è il posto giusto. Spero di incontrarti qui presto.”

Lille Skansen is a restaurant by the harbour at Skansen in Ila. You can enjoy dinner close while watching the boats come and go and enjoying the view of the Trondheimsfjord. The simple but tasty menu is based on fresh seafood. Lille Skansen is also used as a function venue and supplies catering. The restaurant and the new pedestrian area towards Brattøra is widely used by locals, but still not so well known by tourists. The restaurant is open daily in the summertime, but has limited opening during winter.
