Ci troviamo al largo della costa di Kirkenes, nel Sud Varanger nella Norvegia settentrionale. È uno dei porti principali per la pesca del granchio reale nel Mare di Barents.
Da qui i pregiati granchi vengono esportati nei migliori ristoranti in tutto il mondo, inclusi naturalmente diversi ottimi ristoranti di pesce norvegesi.
Gustare il granchio reale preparato in modo sublime in un lussuoso ristorante è un’esperienza divina. Ma bisogna ammettere che ha un sapore paradisiaco anche servito fresco appena catturato in mare. Specialmente se hai partecipato alla pesca!

Non ti rendi conto davvero di quanto sia enorme un granchio reale prima di vederne uno dal vivo.

Gustosi giganti
Il granchio reale è arrivato piuttosto di recente in Norvegia, infatti è stato solo nel 1977 che è stato pescato qui il primo esemplare. Fino ad allora in Norvegia era conosciuto come granchio della Kamchatka, dal nome della penisola sulla costa est della Siberia.
Il granchio reale che ora vive al largo della Norvegia proviene originariamente dal fiordo di Murmansk, dove è stato liberato dai biologi sovietici negli anni ’60. Da allora la popolazione si è estesa alla Norvegia settentrionale, nelle cui acque fredde ha trovato l’ambiente ideale.
“Ci sono più di un centinaio di specie di granchi reali. Il granchio rosso è la seconda specie più presente ed è anche quello che si mangia più comunemente,” dice Michael, guida di safari al granchio reale dello Snowhotel Kirkenes.

La polpa del granchio reale è dolce e aromatica e viene spesso paragonata all’aragosta. Secondo Michael la parte più gustosa è la spalla.
“Il muscolo della spalla è il filetto del granchio reale. È la carne più tenera del granchio,” afferma Michael.
Hai voglia di assaggiarlo? La maggior parte dei safari al granchio reale in Norvegia include abbondanti assaggi. In altre parole quelli dell’escursione sono soldi ben spesi, soprattutto se consideri che il granchio reale è tra i piatti più cari sul menu dei ristoranti.
