Food waste is one of the most unnecessary climate and environmental challenges of our time. Within a few decades, the world may struggle to produce enough food if current trends continue. One important part of the solution is reducing the amount of food that is thrown away. This benefits the environment, the climate and personal finances.
This lecture provides insight into:
- How food waste affects the climate and the environment
- What technically happens when food spoils
- How to store food to maximise its shelf life
- How to assess freshness and quality using the senses
- How ingredients that look unappealing can still be used
- Recipes for delicious meals made from food that might otherwise have been discarded
